Fazenda 3 Rios is owned and run by Olga Maria de Godoy Tavares and her family, high on the plains of the Cerrado Mineiro region in the state of Minas Gerais.
Arara is a relatively new variety. Released in 2012, it’s prized for its high-quality cup profile, its productivity, and resistance to drought and disease.
The natural process allows the ripe, yellow coffee cherries to dry with the whole fruit intact and the concentrated fruit flavours and sugars to be absorbed by the beans.
We’ve roasted this coffee medium-light, and it’s fantastic as a filter coffee, espresso or flat white.
